Kurnik is an old Slavic recipe for a celebratory layered pie: buttery puff pastry, poached free-range chicken, long-grained rice, eggs, mushrooms and herbs. Each layer is separated by a thin pancake to retain the juices.

Many think the name comes from the word Kuritsa - chicken in Russian - but no....Kurit is to smoke, because the pie has smoke coming out theatrically from the depths of its belly...

Gulp down with more melted butter and this organic sour cream.
