Salmon Kurnik (celebratory layered pie) - limited edition
For a short period we are making our signature Kurnik pie with poached salmon - think Kulebyaca par excellence.
Kurnik is an old Slavic recipe for a celebratory pie: layers of buttery puff pastry, Bechamel sauce, poached salmon, rice, eggs, mushrooms and herbs.
Each layer is separated by a thin pancake to retain the juices.
Many think the name comes from the word Kuritsa - chicken in Russian - but no....Kurit is to smoke, because the pie has smoke coming out theatrically from the depths of its belly...
Gulp down with more melted butter and this organic sour cream.
Size: serves 8 generously.
How to store: in the fridge, and consume within three days.
How to warm up: in the pre-heated 180 (or 160 fan assisted) oven for 15 mins.
Ingredients: poached salmon, puff pastry (wheat flour, margarine, water, emulsifier, salt, acidity regulator, alcohol, lemon juice concentrate, deactivated yeast, natural flavouring), mushrooms, eggs, basmati rice, onion, butter, whole milk, vegetable oil, plain flour, parsley/tarragon,.
