Yoghurt from raw organic milk
Traditionally pot set. No additives or thickeners or anything like that. Just cultured milk.
Made by Kappacasein Dairy in central London in small batches using their own starter culture in a traditional 600L copper vat that was brought over from France.
The yoghurt is made from raw organic, cow's milk that they collect from Bore Place in Chiddingstone, Kent. The milk is collected during the morning milking, and processed, still warm from the cow, within 2 hours of collection. Minimal interventions (limited refrigeration, pasteurisation, and starter cultures) and maximum utilisation of the milk's nutrition.
