Kurnik is an Slavic recipe for a celebratory layered pie: buttery puff pastry, poached chicken (or salmon or wild mushrooms), long-grained rice, eggs, mushrooms and herbs. Each layer is filled with a gorgeous Béchamel sauce and separated by a thin pancake to retain the juices.
Did you know? Many think the name comes from the word Kuritsa - from kurka in Ukrainian or kuritsa in Russian - but some historians say that the name comes from the word Kurit - to smoke - because the pie has smoke coming out theatrically from the depths of its belly...
