Ivan Chai is widely known and much loved across Eastern Europe, but is almost unknown in this country. What a pity.
Completely caffeine free, Ivan chai is made from the leaves of fireweed (also called as willow herb or rosebay willowherb).
Did you know that until the late 18th century it was Ivan Chai - and not the 'black' tea we now know - that was imported to Britain from Russia*?
In fact, it is said that it's thanks to the Russians who developed oxidisation and fermentation technology a thousand years ago, that the British got the taste of a good cuppa! The English fell in love with Ivan Chai and the black tea started to be manufactured in India because of the influence of the British East India Company.
Flavour notes: grassy, floral, smooth. Unlike many 'herbal' teas, Ivan Chai has a lot of depth.

We buy the tea from a small producer just outside of Tallinn. Natalja grows the herb and then ferments it for 48 hours.
How to drink: put 1-2 tea spoons of the leaves into a pot (for 1-2 people), pour boiling water and let it steep for 10 minutes.
Ivan Chai can be re-brewed, so pour more hot water into the same pot throughout the day and continue enjoying for 24-48 hours.
