Ivan Chai is widely known and much loved across Eastern Europe, but is almost unknown in this country. What a pity.
Completely caffeine free, Ivan chai is made from the leaves of fireweed (also called as willow herb or rosebay willow herb).
We source our Chai from Katya's homeland - Estonia, where we work with Natalya who forages for the leaves each summer, then ferments them for 48 hours for the dark and smoky flavour.
Flavour notes: grassy, floral, smooth. Unlike many 'herbal' teas, Ivan Chai has a lot of depth and tannins, so it tastes like black tea.
