Plump, fluffy pancakes with a surprise fruit pripyok - apple or other such, whatever is good in season!

This is an old, Slavic recipe, which we are reviving. Pripyok literally means something that's baked on top of something: fruit, veg or even cheese.

The result is a crispy pancake exterior with a slightly gooey apple-y heart.

The best with Neal's Yard Dairy smetana and a cuppa of this Estonian, aromatic Ivan Chai.

NB: We now have a gluten free option too!

* Can you freeze them? We advise against it, because we might have frozen them before. We very rarely freeze our food, but sometimes we do when we know the quality of the dish won't suffer. We check in advance to ensure this is the case.  We only ever freeze to manage the production of our little kitchen and avoid waste.
